I have experienced some similar things on the PC version, as well (playing with an xbox one controller until I can get my wheel set up).
For anyone else frustrated with the handling performance of certain cars, the steering ratio adjustment in the car setup (not a controller setting, therefore changeable and stored by vehicle and venue) is your friend! This can help iron out a lot of the differences in steering rate from car to car without having to constantly change controller settings.
As for the bugs, many are present on the PC as well. I had a qualifying session on Brands Hatch where my car would clip through the closed pit door and take complete damage before ever limping out onto the track. Also "skipped to end of session" out of frustration with a particular race, resigned to the fact that i was in dead last and not going to improve, and it awarded me a victory. Hopefully they will iron it all out quickly.
