@Mickeymac: I've played Vandal Hearts and Castle Crashers. Guess I never really thought of them as an RPG. VH=tactical, CC=beatemup. They are great games all the same though and very enjoyable. ...I totally forgot, I must go play DeathSpank.
Back on topic though, I've known people who found Tales of Vesperia to be an enjoyable RPG on 360.
I guess you're right, they aren't standard games (but neither is Costume Quest, actually. It just has the familiar Turn-based gameplay, similarly to Penny Arcade Adventures. Like PAA, though, it comes off as more of an adventure game than an RPG, at least from what I've played and seen, which is just the demo so far.
As for Disk games, aside from Star Ocean:TLH, I also really liked Eternal Sonata. It had an interesting story and a unique gameplay system that blends turn-based and action Roleplaying better than I've seen in any other game.
I also enjoyed Mass Effect, but I didn't like it as much as others (but I didn't expect to). The gameplay was pretty good, but the controls sucked and the game was lacking a bit in a few areas. It was great that it was more linear and story focused than most Western RPGs usually are, though, and it was great that it didn't make you waste hours building your character (in this game, you make 3 or 4 quick and easy adjustments and then you're in). In other words, for a WRPG, it was pretty slick. I didn't care for the story, though. While it was nice that they fleshed out the universe so thoroughly, the story itself is just a by-the-numbers Space Opera with a modern feel, and I just don't care for those at all. I lovedthe way the story plays out, however. The way you selected how the story goes was brilliant, and it never forced a break in the cutscenes, making it all feel very natural, and I always hoped I'd see it used again in a better game (And it worked!). The only other Xbox 360 RPGs I've played are Fable 2, Final Fantasy XIII, Tales of Vesperia, Lost Odyssey, Blue Dragon, Spectral Souls, Infinite Undiscovery, Operation Darkness, and The Last Remnant, and I didn't care for any of them. I do need to play Enchanted Arms and Magna Carta 2 someday, though.
Fallout New Vegas is excellent RPG with a bit of FPS
I got Fallout 3 two years ago and spent a good solid 3 months hammering it to do all the side quests then all the Karma stages... as a FPS it's a bit ropey but it really wasn't made for that its a serious RPG with excellent storylines, great dialouge and fantastic character shaping

My personal favourite is Lost Odyssey. It happens to be exclusive to the Xbox 360 as well - and is truly amazing. The best part is definitely the Thousand Years of Dreams stories. Impressive how with simple words, music and very effective yet minimal pictures can paint a story so very clearly and so much better than the main game does. On top of that though the gameplay is fun, the story moves briskly, the dialogue is thought-provoking, heart-wrenching and satisfying (and ocassionally humourous), and the graphics are incredibly impressive.
I found Fallout 3 to be incredibly good too, but I think it's better to pick that title up on PC. The use of Mouse and Keyboard is better I think (though you can still use a 360 controller if you want), and of course there is the mods.
The Mass Effect titles are excellent, with ME2 being truly great - but moving more into action game territory. Still, it has excellent stories, convincing worlds, great action and some truly memorable characters. ME2 alone has several of my favourite gaming moments in 2010. Though both games can also be purchased on PC.
And finally, while simple and elegent, the Fable titles shouldn't be missed. They offer a wealth of ideas - literally giving you a lot of options to play the way you wish. Fable 3 was just released, and Fable 2 was released some time ago. Fable 2 also came in a GOTY Edition, which packaged in the 2 DLC episodes.
And before I forget, The Elder Scrolls IV: Oblivon. Personally, I prefer it on PC, but it still works great on Xbox 360. It came in a Game of the Year Edition which packaged in the expansion and another DLC episode. It came out a while ago now, and strangely I liked Fallout 3 more (usually for people it's the opposite) but it's still a worthwhile jaunt. Especially now that Elder Scrolls 5 is due next year.

Lol I just got Eternal Sonata today in the mail, I've been needing a good JRPG...anyway, if it were a vote, Oblivion would be my choice hands down! It's just so huge! Oblivion is the closest I've ever been to being satisfied when it comes to size of explorable territory (Just Cause 2 a close second 'cuz it's just so awesome). Oblivions only downside, IMO, is simply that it was released so early in the Xbox's lifespan, BUT all that will change the second Skyrim comes out.
Prediction-wise, I have a feeling that Skyrim is going to be where it's at for RPG's of this generation. Think about how awesome Oblivion was as a cruddy launch game, and how amazing it would've been if they had waited and created a fully polished version a couple years in. Skyrim has been in the works for, lets see, about 5 years is it? So yeah, TES 5 is gunna kick major butt.
