Star Ocean: The Last Hope gets my vote. Fun and deep action combat, a decent story that's kind of a parody/homage of other sci-fi shows, and lots of pretty colors. It also does a few other things here and there that are nice, such as everyone having unique abilities such as mining and such. I think I'm a tad baised since I played Star Ocean: Till the End of Time that I so wanted to be good, but it did so many things wrong that this game did right.

My two favorite RPGs on the 360 are Tales of Vesperia and Lost Odyssey. I really need to pick up both Mass Effect games since I hear that they are both excellent.

I'd say Mass Effect 1 and 2 as well as Fallout 3 (still haven't picked up New Vegas). JRPGs aren't really my bag, so I can't offer an opinion on those.

Personally I prefer Arkadian Warriors and Vandal Hearts. Penny Arcade Adventures is also much better story-wise, at least. I'm sure if I actually played Deathspank, it would probably be very high on my list as well. Oh, and lets not forget Castle Crashers. I don't even have to link it. If you have an Xbox and haven't played it yet, do so now my good sir.

I guess you're right, they aren't standard games (but neither is Costume Quest, actually. It just has the familiar Turn-based gameplay, similarly to Penny Arcade Adventures. Like PAA, though, it comes off as more of an adventure game than an RPG, at least from what I've played and seen, which is just the demo so far.
As for Disk games, aside from Star Ocean:TLH, I also really liked Eternal Sonata. It had an interesting story and a unique gameplay system that blends turn-based and action Roleplaying better than I've seen in any other game.
I also enjoyed Mass Effect, but I didn't like it as much as others (but I didn't expect to). The gameplay was pretty good, but the controls sucked and the game was lacking a bit in a few areas. It was great that it was more linear and story focused than most Western RPGs usually are, though, and it was great that it didn't make you waste hours building your character (in this game, you make 3 or 4 quick and easy adjustments and then you're in). In other words, for a WRPG, it was pretty slick. I didn't care for the story, though. While it was nice that they fleshed out the universe so thoroughly, the story itself is just a by-the-numbers Space Opera with a modern feel, and I just don't care for those at all. I lovedthe way the story plays out, however. The way you selected how the story goes was brilliant, and it never forced a break in the cutscenes, making it all feel very natural, and I always hoped I'd see it used again in a better game (And it worked!). The only other Xbox 360 RPGs I've played are Fable 2, Final Fantasy XIII, Tales of Vesperia, Lost Odyssey, Blue Dragon, Spectral Souls, Infinite Undiscovery, Operation Darkness, and The Last Remnant, and I didn't care for any of them. I do need to play Enchanted Arms and Magna Carta 2 someday, though.
